Cajun Rice

  • 3 cups cooked Mekong Brown Rice

  • 2 Tablespoons extra-virgin olive oil

  • 1 cup chopped celery, about 3 stalks

  • 1 cup chopped red bell pepper, about 1 large pepper

  • 1 small yellow onion, finely chopped

  • 3 cloves garlic, finely minced

  • 1 Tablespoon Cajun spice mix, more or less to taste

  • 1 teaspoon fresh thyme

  • 1/2 teaspoon each fresh cracked pepper and sea salt, more or less to taste

  • 1 can diced tomatoes (or ½ cup simple tomato sauce)


  1. Prepare rice according to package directions, or feel free to use leftover rice.

  2. Prep vegetables.

  3. Using a large skillet, heat oil over medium heat. Add chopped celery, bell pepper and onion. Sauté 4-5 minutes. Add garlic and give a good stir. Continue cooking another 1-2 minutes.

  4. Add rice, diced tomatoes (or tomato sauce) Cajun spice mix, sea salt and pepper. Stir until all sauce has been evenly distributed throughout the rice.

  5. Taste and adjust seasoning if desired.

  6. Serve warm
