Cinnamon Raisin Kugel with Apricots

Naturally sweet raisins and dried apricots are mixed in with the ramen noodles in this delicious gluten-free twist on the classic kugel. Great for breakfast, too.


  • 2- 2.8 Ounce packages Organic Lotus Foods Jade Pearl Rice Ramen Noodles

  • 2 organic eggs

  • ¼ cup organic raisins

  • ¼ cup organic dried apricots

  • 2 Tablespoons organic maple syrup

  • 2 teaspoons organic cinnamon

  • 2 teaspoons organic vanilla extract

  • 1 tablespoon organic extra virgin coconut oil


  1. Preheat oven to 350 degrees.

  2. Cook ramen noodles according to package. Drain and rinse ramen in cold water. Leave ramen to drain excess water in a fine mesh drainer.

  3. In a medium sized mixing bowl, whisk the eggs. Add and mix in ramen noodles,  raisins, apricots, maple syrup, cinnamon, and vanilla extract. Grease a small (8”x6”) casserole dish with coconut oil. Pour in the noodle mixture. Bake until golden brown, for 20 minutes, or until noodles are slightly crisp on the top. Slice and serve immediately.
