Rinse rice in a sieve with cold water until clear. Set aside.

Heat coconut oil in a heavy pot with a tight fitting lid over medium-high heat. Sauté onion until golden brown, then add curry paste and ginger. Continue cooking until curry paste is fragrant (~1-2 mins).

Stir in rice, broccoli, carrot, and green beans. Mix well.

Pour in broth or water, coconut milk, and soy sauce. Mix thoroughly. Cover and cook on low for 12-15 mins, until the rice is just done.

Without stirring the rice, remove from heat and set aside for 5 mins. Uncover and fluff the rice with a fork.

Serve immediately with a squeeze of lime juice and fresh cilantro.
