In a heavy-bottomed pot, bring rice, coconut milk, salt, vanilla, sugar, and cinnamon to a gentle boil over medium heat, then reduce to low and simmer for 30-40 mins, or until rice is very tender, stirring occasionally.

Peel and dice one of the peaches. Fold the diced peach and coconut cream into the rice pudding and cook for an additional 1-2 mins until the peaches soften slightly. Remove from heat.

Divide the pudding into serving bowls and garnish with fresh sliced peaches, a drizzle of maple syrup, and a sprinkle of cinnamon. Serve immediately.
