Cook rice according to directions on package then transfer to a large bowl and let cool while you prepare the lemon dressing.

Add olive oil, lemon juice, salt, and black pepper to a small bowl. Whisk to combine then set aside.

Once rice has cooled, transfer to the bottom of a large jar and add cabbage on top. Pour dressing over cabbage and rice.

Stack chickpeas, cucumber, carrots, tomatoes, parsley, mint, and feta cheese. Keep refrigerated for up to 3 days until ready to serve.
