Heat oil in a small saucepan or pot. Add onion, carrot, celery, and rosemary. Fry for 2-3 mins, until fragrant.

Add the water, passata, soup packet and noodles. Cook for 4 mins, stirring occasionally, until noodles are tender.

Once cooked, remove from heat and transfer to a serving bowl. Finish with a generous grating of fresh parmesan, or your favorite vegan alternative. Serve and relish the flavors!
