Regenerative Organic White Basmati Rice

  • 1

    Bring rice, light coconut milk, and ½ cup full-fat coconut milk to a boil in a large pan.

    Reduce to low and simmer for ~20 mins, or until rice is tender, stirring frequently.

    Add in the rest of the full-fat coconut milk, salt, vanilla, and sugar, and continue stirring and simmering for 20 mins.

    Remove from heat and set aside to cool.

  • 5

    Once cooled, serve with blueberries, and strawberries.
