Cook noodles according to package directions, rinse with cold water and set aside.

Prepare vegetables.

Combine all dressing ingredients except the water in a bowl. Whisk until smooth, adding the water to thin if necessary.

Toss noodles with vegetables, then add desired amount of dressing.

Mix to combine and serve topped with sliced almonds and parsley.
