I was pleasantly surprised at the nice texture of these noodles. They can be soft or firm, depending on how long you cook them. Also the length is just right. They are a bit shorter than the thin ramen noodles. The big win with these noodles is the width. They are perfect!!

These noodles have excellent "chew," but it is important to follow the cooking instructions on the package - otherwise you end up with tiny pieces of noodles instead of nice strands. Even then, the strands are shorter than other ramen noodles.
