Ingredients

  • 450g beef flank/tenderloin
  • 10g rock sugar
  • 2 star anise
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 dried orange peel
  • 5g Sichuan peppercorns
  • 50g soy sauce
  • 15g dark soy sauce
  • 15g oyster sauce
  • 120g Lotus Foods Organic Brown Udon Rice Noodles
  • 2 baby bok choy
  • Peanut cilantro, radish, soft boiled egg for garnish
  • Water

Organic Brown Udon Rice Noodles

    Soak beef in clean cold water for 20 mins.

    Add beef, spices, and sauces to a pot of cold water and bring it to a boil.

    Turn to low heat and boil for 2-2½ hours.

    Boil another pot of water and put noodles into the pot.

  • 5

    Boil 10 mins or until tender.

    Blanch the bok choy in boiling water for 30-60 seconds.

    Assemble: noodles, a little noodle water, beef, beef sauce, bok choy and garnish.
