Soak beef in clean cold water for 20 mins.

Add beef, spices, and sauces to a pot of cold water and bring it to a boil.

Turn to low heat and boil for 2-2½ hours.

Boil another pot of water and put noodles into the pot.

Boil 10 mins or until tender.

Blanch the bok choy in boiling water for 30-60 seconds.

Assemble: noodles, a little noodle water, beef, beef sauce, bok choy and garnish.
