Ingredients

  • 3 cups Lotus Foods Organic Brown Jasmine Rice
  • 2 tbsp extra-virgin olive oil
  • 1 cup celery, chopped
  • 1 cup red bell pepper, chopped
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, finely minced
  • 1 can diced tomatoes or ½ cup simple tomato sauce
  • 1 tbsp Cajun spice mix, more or less to taste
  • ½ tsp each fresh cracked pepper and sea salt, more or less to taste

    Organic Brown Jasmine Rice

      Prepare rice according to package directions (or use leftover rice).

      Heat oil over medium heat in a large skillet. Add celery, bell pepper and onion. Sauté 4-5 mins.

      Add garlic and stir well. Continue cooking for another 1-2 mins.

      Add rice, diced tomatoes, spice mix, pepper and salt. Stir until all sauce has been evenly distributed throughout the rice.

      Taste and adjust seasoning if desired. Serve warm.
