Prepare rice according to package directions (or use leftover rice).

Heat oil over medium heat in a large skillet. Add celery, bell pepper and onion. Sauté 4-5 mins.

Add garlic and stir well. Continue cooking for another 1-2 mins.

Add rice, diced tomatoes, spice mix, pepper and salt. Stir until all sauce has been evenly distributed throughout the rice.

Taste and adjust seasoning if desired. Serve warm.
