Cook noodles according to directions on package. Drain well and set aside.

While the noodles are cooking, melt butter in a small pan or saucepan over medium heat.

Add milk, sriracha or chili oil, and garlic to the pan, stirring gently. Cook for 1-2 mins until warmed through.

Gradually add the cheese, stirring continuously until it melts, and the sauce becomes smooth and creamy. Season with salt and pepper to taste.

Add the cooked noodles to the pan and toss gently in the sauce until well coated.

Transfer to a serving bowl and top generously with grated parmesan or pecorino cheese, then sprinkle with spring onions, and serve immediately.
