Ingredients

For the broth

  • 1 tablespoon avocado oil
  • 2-3 green onions (white parts), thinly sliced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • ½ cup thinly sliced mushrooms (button or
    shiitake, optional)
  • 4 cups chicken or beef bone broth
  • 2 tablespoons soy sauce
  • 1 tbsp mirin (optional)

    To make the broth, heat oil in a medium-sized pot over medium heat. Add onions, garlic, and ginger. Sauté for 1-2 mins until fragrant.

    If using, add mushrooms and cook for 2-3 mins until softened.

    Pour in bone broth, soy sauce, and mirin (if using) and simmer for at least 15 mins to develop the flavors.

    While the broth is simmering, cook noodles according to directions on package. Drain and set aside.

    To serve, divide cooked noodles between serving bowls. Ladle the hot broth over the noodles.

    Top each bowl with sliced pork, egg, seaweed, and onions. Serve hot.
