Cook noodles according to directions on package. Drain and set aside.

While noodles are cooking, add oil/butter to a large pan over medium-high heat. Add shallots and cook for 2-3 mins, until softened. Add mushrooms and cook, stirring often, until they release their moisture and brown (~5-7 mins).

Add garlic and sauté for another 1-2 mins until fragrant, being careful not to burn.

Reduce heat to low and stir in cream. Simmer for 1-2 mins for the sauce to thicken slightly. Stir in parmesan and season with salt and pepper to taste.

Add noodles to pan and toss gently to coat in sauce. Cook 1-2 mins more to allow noodles to absorb flavors.

Divide pasta between serving plates. Garnish with parsley and serve immediately.
