Cook rice in salted water according to directions on package.

While rice is cooking, heat oil over medium-high heat in a large skillet or wok. Add pork and cook until browned and cooked through, breaking it up with a wooden spoon as it cooks. Season with salt and pepper to taste.

Add onion, garlic, and ginger to the skillet and cook until onion is softened and translucent (~2-3 mins).

Add coleslaw mix, snow peas (if using), rice vinegar, soy sauce, and hoisin sauce to the skillet. Cook until cabbage has wilted, and the vegetables are tender and coated with the sauce (~3-4 mins).

Taste and season with soy sauce, salt and pepper as needed.

To serve, divide rice among serving bowls and top with the egg roll mixture. Garnish with chopped green onions.
