Ingredients

  • 1 tbsp coconut oil
  • 1 shallot, chopped
  • 1 tbsp finely minced ginger
  • 2 garlic cloves, minced
  • 1-2 tbsp green curry paste, to desired heat preference
  • 2 cups vegetable broth
  • 14-oz (400ml) can coconut milk
  • 1 tbsp soy sauce or coconut aminos, more to taste
  • 2 tsp coconut sugar
  • 1 tbsp fish sauce (optional)
  • 1-2 tbsp freshly squeezed lime juice
  • 2 cakes Lotus Foods Organic Jade Pearl Rice™ Ramen

Toppings

  • 2-3 charred bok choy halves
  • 1 cup loosely-packed cilantro and/or Thai basil leaves
  • 2-3 fresh lime wedges
  • 2-3 tsp sesame seeds

      Heat oil in a medium-sized pot over medium heat. Add shallot, ginger, and garlic. Fry for 2-3 mins, until brown and fragrant. Add curry paste and cook for another minute, stirring frequently.

      Add broth, coconut milk, soy sauce, coconut sugar, and fish sauce, if using. Simmer for 15 mins, stirring occasionally.

      While the broth is simmering, cook noodles according to directions on package. Divide between bowls, add broth and toppings, and serve immediately.
