Forbidden Rice® Ramen with White Miso Soup

    Prepare veggies, then cook eggplant and potatoes with olive oil, salt and pepper in an air fryer at 400 until potatoes are soft (~7- 10 mins).

    Meanwhile, prepare ramen soup per directions on package.

    Add to a serving bowl, and top with eggplant, potatoes, shredded cabbage, and beet greens.
