Whisk sauce ingredients in a small bowl or jug and stir until cornstarch dissolves. Set aside.

Cook noodles according to directions on package. Drain and set aside.

While noodles are cooking, heat oil in a large cast iron pan over medium-high heat and sauté onion for 2-3 mins until softened.

Add mushrooms and stir-fry for another 2 mins.

Add bok choy and stir-fry for 2 mins until everything is softened.

Add beef steak directly into the pan. Stir-fry for 3-4 mins until cooked through.

Pour in the prepared sauce and add noodles to the pan. Stir-fry everything together for 2-3 mins until well combined, and sauce thickens.

Garnish with green onions and serve hot.
