Ingredients

  • ½ cup Lotus Foods Regenerative Organic White Basmati Rice
  • 14oz cans light coconut milk
  • ¼ tsp salt
  • 1 tsp vanilla seeds from the pod, vanilla paste, or extract
  • ¼ cup + 3 tbsp sugar, more to taste
  • 1 tsp ground cinnamon
  • 1 medium-sized peach, peeled & finely diced
  •  cup coconut cream

Regenerative Organic White Basmati Rice

    In a heavy-bottomed pot, bring rice, coconut milk, salt, vanilla, sugar, and cinnamon to a boil. Reduce heat to low and simmer for ~30-40 mins, or until rice is very tender, stirring occasionally.

    Add in diced peaches and coconut cream and cook for a further 1-2 mins, until peaches begin to soften. Remove from heat and cool to room temperature.

    Fill popsicle molds with the mixture. Place in freezer for at least 4 hours, or until frozen solid.
